At Carnival, every recipe with Caseificio Longo products is a winner!

These are still winter weeks, but with more light and temperatures beginning to rise: it’s the perfect time to “dare” a little in the kitchen, with colorful dishes that will delight the little ones while satisfying the tastes of adults too.

This is because every Caseificio Longo product is the result of over 70 years of passion for Piedmontese dairy tradition found in everything we make, from our Tomino del Boscaiolo to all our other fresh and aged cheeses.

So, here is a complete menu for Carnival Sundays, or for Shrove Tuesday, by Caseificio Longo.

First course: red radicchio and Paglierina lasagna

We can start with a colorful and very delicious first course: red radicchio and Paglierina lasagna. An original dish where contrasts win the day, especially between the characteristic aroma of Paglierina and the slight bitterness of the radicchio.

Main course: beetroot meatloaf with a Toma DOP heart and pancetta crust

For the main course, we suggest a meat-based dish that takes some work in the kitchen but offers great satisfaction: a meatloaf made with minced pork and veal, beetroot, and our Toma Piemontese DOP, with a crispy pancetta crust: click here to watch the recipe preparation video.

Dessert: Seirass Reale and exotic fruit crumble

Finally, for dessert, we thought of a colorful and exotic proposal (perfectly in the spirit of Carnival): a crumble cup with ricotta and Seirass Reale enriched with fresh pineapple, mango, and papaya, with a touch of lime. A dessert that, thanks also to the rum and pecans, will provide a truly delicious end to the meal!
