Meteorological summer has officially begun (and the temperatures these days confirm it), astronomical summer not yet, but the solstice is now just around the corner.

The heat increases the desire for fresh yet tasty foods, and Caseificio Longo is ready to accompany your summer lunches, dinners, and snacks with the taste and excellence of Piedmontese dairy that, for more than 70 years, we have been proud to export to Italy and around the world.

Our products are perfectly suited to an entire menu with a decidedly summery flavor, from appetizer to dessert.

Before the main courses, therefore, we suggest a very fresh tomino cream mousse, quick to prepare and perfect to customize with chopped walnuts, basil, or mint (the latter definitely recommended for its freshness). As a first course, instead, we recommend a dish that’s delicious served hot or even cold, after a few hours in the refrigerator: a barley salad with peppers and Primosale. A dish with Piedmontese character since it pairs peppers with our Primosale, with its fresh and delicate flavor.

Primosale is also the star of the second course. What’s fresher and more summery than tuna carpaccio? Even better when accompanied by thinly sliced Primosale, which enhances the flavor of the fish without overpowering it.

To finish in style (quite literally), we suggest a cheesecake, a dessert suitable for all year round but at its best in summer, made with our Seirass Reale and topped with cranberries. In this case, however, let your imagination and seasonal tastes guide you: you could garnish the cheesecake with cherries or an apricot compote.
