roll of fresh Longo Tomini

tablespoon of vinegar

teaspoon of chopped parsley
Half a red onion
Salt

Slice the onion into very thin rings and place them in a bowl with the vinegar, parsley, salt, and oil; let it rest for 5–6 hours.

Two hours before serving, slice the Longo Tomini, arrange them on a plate, distribute the onion slices over them, and drizzle everything with the dressing from the bowl.
