The autumn equinox is fast approaching and, although temperatures are still very pleasant, the change of season is just around the corner. No need for melancholy, though: every season has its own colors, scents, and products to accompany us at the table. At Caseificio Longo, we know this well, and we always strive to pair our products with natural ingredients for healthy and tasty recipes.
What do we recommend for autumn? Pumpkin, of course. This vegetable, which instantly evokes autumn (and Halloween), was among the first to be imported to Europe from Central America, along with potatoes and tomatoes.
A vegetable that the Mayans knew well and that is believed (thanks to certain findings) to have been cultivated as far back as 5000 BC!
Rich in vitamins A, B1, and C, pumpkin is packed with minerals like calcium and phosphorus, as well as fiber and antioxidants.
If we were to make a food comparison, you could almost say that pumpkin is a bit like pork, in that nothing goes to waste: pulp, flowers, and seeds. Here, then, is a typically autumnal menu that pairs pumpkin (and more) with some of our products, bringing all the excellence of Piedmontese dairy to your table in an original way.
As an appetizer, you could start with a Primosale and pumpkin savory tart, while for the first course, we’ve thought of a great classic: pumpkin and Paglierina risotto, with our cheese giving the entire dish a characteristic scent of hay and almond. If you don’t want a menu entirely based on pumpkin, however, we suggest 40-yolk tajarin with truffle robiola cream and another great autumn classic, chestnuts.
For the main course (or an alternative first course), we follow the “use everything” rule and propose stuffed zucchini flowers with goat cheese, a recipe that is simple to prepare and very appetizing to enjoy.
