In a bowl, mix salt and sugar and coat the meat, place it in a vacuum-sealed bag and let it marinate in the fridge for 48 hours
Cut the celery and carrots with a vegetable peeler and place them in ice water to make them crispy
Thinly slice the marinated beef with a sharp knife
Place the Tomino confetti in small bowls, arrange the marinated beef on top, add the crispy vegetables (drained and dried)
Finish with oil
