250 g Seirass Reale
400 g of béchamel sauce
60 g of flour
to taste of butter for the ramekins
4 eggs
1 bunch of thyme
to taste salt

Add the egg yolks, chopped thyme, salt, and Seirass to the lukewarm béchamel sauce.
Whisk the egg whites until stiff and fold them into the mixture.

Grease the ramekins with butter and fill them. Bake in a bain-marie in a preheated fan oven at 180°C for 25-30 minutes. Serve immediately.
