Tomino del Boscaiolo® with Mâche and Raspberry Vinegar

Clean the mâche by carefully removing any soil residue and soak it in water with a tablespoon of baking soda. Heat a grill pan; once it is very hot, cook the tomini for a few minutes on each side.
In the meantime, prepare the raspberry vinegar reduction. In a small saucepan, bring the vinegar to a boil with a little water and a teaspoon of sugar over low heat, stirring frequently until it has thickened.
